- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/5 tsp. cayenne pepper
- 2 tsp. paprika
- 2 Tbsp. ground cumin
- 4 tsp. salt

- 2 cucumbers
- 2 fresh mangos
- 1 lime
- 4 ears of corn
- 2 lb. fresh salmon, cubed
- 2 Tbsp. olive oil
- 1 package yellow corn tortillas
- 1/4 cup cilantro and extra limes for garnish

Prepare the Salsa: Slice the corn off the cob — a task where a sharp, reliable kitchen knife truly shines. Peel and cube the mangos, then peel and dice the cucumbers. Combine these in a large bowl and mix with the juice of one lime. Let the ingredients stand for 15 minutes to allow the flavors to meld.
Prepare the Salmon: Remove the skin from the salmon and cut it into one-inch cubes. Drizzle with olive oil and add four tablespoons of our homemade taco seasoning. Mix gently to ensure each piece is coated evenly.
Grilling: Grill 8–10 corn tortillas until they’re slightly charred. This adds a smoky flavor that perfectly complements the salmon. For the salmon itself, you have two options: a hot flat-top grill or a sizzling cast iron pan. Either way, cook the salmon to an internal temperature of 135°F for the perfect flaky texture.
Assembly: Place your grilled corn tortillas on a plate, add the perfectly grilled salmon, and top with our refreshing summer salsa. Garnish with cilantro and a squeeze of fresh lime juice for that extra zing.
